I’m trying to install Surfshark on my chromecast but that app does not appear when I search for it. I have no clue why. However, I do see many competitor apps. Any idea what’s wrong?

Maybe due to region restriction? Can you see it on your play store?
Interesting, I just checked on my own Chromecast and I can find it. Perhaps you can specify more about the version of Chromecast that you have? Mine is running version 12 of Android TV OS
Go to VPN settings, go to advanced settings and turn on ‘Discover on LAN’
Go to play store
Install projectivity launcher
Done
